Vegan Lemon & Coconut Donuts




Ingredients(Makes 6 Donuts)

  • 40g of plain protein powder

  • 60g oat flour or oats blended

  • 50g stevia or similar

  • 1 Banana mashed

  • 50g shredded coconut

  • zest of 1 lemon

  • 125ml water

  • 1 TBSP Lemon Juice

  • 1 TSP Baking Powder

  • a pinch of salt

To decorate

  • 100g Icing sugar

  • Lemon Juice

  • shredded coconut

What you need to do:

  1. Mix all dry ingredients in a bowl: Protein powder, oat flout/meal, salt, baking powder, sweetener, shredded coconut, lemon zest

  2. Add the wet ingredients - banana, lemon juice, water and stir well.

  3. Place in donut moulds

  4. Bake at 180 degrees for about 15 minutes

  5. Wait for them to cool down before icing.

To make the icing

  1. Mix sifted icing sugar with lemon juice until its reached desired consistency.

  2. Spread over the donuts

  3. Top with shredded coconut.
