Lemon and Poppy Seed Muffins

These muffins are delicious, as well as being gluten free and vegan!


3/4 cup maples syrup

3/4 cup fresh lemon juice

1/4 cup finally grated lemon peel

2 tsp ground flaxseed

1 tsp vanilla extract

3/4 tsp xanthan gum

1.5 cups gluten free self raising flour

1/2 cup almond flour

2 Tbsp poppy seeds

1 Tbsp gluten free baking powder

3/4 tsp sea salt

Pre-heat oven to 175C

Line a 12 cup muffin tin with muffin liners

Place maple syrup, lemon juice, lemon peel, flaxseed, vanilla extract and xanthan gum in a blender, cover and blend until smooth.

Combine flour, almond flour, poppy sees, baking powder and salt in a medium bowl; mix well.

Add flour mixture to blender; blend until just incorporated.

Evenly divide batter between the prepared muffin cups, filling 3/4 full. Bake for 18-20 minutes or until a toothpick inserted into the centre comes out clean.

Allow to cool for 5-10 minutes before removing muffins from tray. cool completely on a rack.
