Fudgey Vegan Brownies

Finding a tasty gluten free vegan brownie has been a goal of mine. I have experimented with various types of flours with varying results - most being awful!, that was until I tried using oat flour. These have a delicious fudgey texture, but if you prefer a firmer brownie simply bake for slightly longer!



Ingredients

  • 16oz vegan chocolate chips

  • 2 cups unsweetened apple sauce

  • 1/2 cup cocoa powder

  • 1 tsp baking soda

  • 2 tsp vanilla extract

  • pinch of salt

  • 1 cup oat flour( blitz oats in blender)

Makes 16 Brownies





Method

  1. Preheat oven to 170 degrees centigrade

  2. Melt the chocolate in a bowl over a pot of simmering water. Let cool for 5-10 minutes before using.

  3. Add all ingredients to a blender and blitz on a medium/low speed until combined.

  4. Transfer the mix to a baking tray lined with greaseproof paper.

  5. Bake for 30-35 minutes(or slightly longer if you wish a firmer consistency)

  6. Leave to cool for 30 minutes before cutting.

  7. Enjoy!
